The Food Safety and Standards Authority of India (FSSAI) has directed a hotel operator to take immediate corrective measures after identifying multiple food safety and hygiene violations at its kitchen. The regulator has warned that failure to comply with its directions could lead to further action, including suspension of the food business licence.

In a post on Facebook, the FSSAI said the food business operator (FBO) had been instructed to address the identified deficiencies and submit a detailed action taken report, supported by documentary and photographic evidence wherever applicable.

Major Food Safety Violations Identified

The inspection highlighted several concerns related to the maintenance of the premises and kitchen equipment. These included rusted machinery, freezer leakage and deficiencies in refrigeration, temperature monitoring, ventilation, flooring and lighting.

The regulator also reported inadequate cleaning and sanitization practices, stagnant water, drainage issues and improper food waste management. Pest control measures were found to be inadequate, with cockroach and fly activity observed in the premises.

Further concerns were raised over food procurement and receiving procedures. The inspection reportedly found that fungal-affected and deteriorated fruits and vegetables were being received. Records of approved vendors and systems for tracing food supplies were also found to be deficient.

Concerns Over Food Handlers and Cooking Oil

The FSSAI also raised concerns regarding food handlers’ hygiene practices, including long fingernails and the use of appropriate protective equipment, such as gloves and hairnets.

The inspection further found that the kitchen was not conducting the required checks to assess the suitability of cooking oil for reuse.

According to the regulator, cooking oil samples in use in the NYC kitchen recorded Total Polar Compound (TPC) values of 31 and 24.4. TPC measurements are used to assess the deterioration of cooking oil during repeated heating.

The FSSAI has directed the operator to rectify the violations and provide evidence of compliance. Failure to implement the required corrective measures could result in further regulatory action, including suspension of the FSSAI licence.
